Artisan Dario Cecchini, “The Butcher of Tuscany”
Dario describes it as “the result of a little fun in the kitchen,” something different from traditional mustard chutney sauces which spawned the rhyme, “Wine and sauce is a complete loss.” He and his friend Judy were in the kitchen concocting and mixing a bit of this with a bit of that. The result: savory and sweet with a hint of heat. Made in small batches from red peppers, sugar and pectin, it is perfect when served with sharp cheese, salumi, grilled and roasted meats. I love it on buttered toast!
Inspiration Mix with a bit of horseradish and serve with boiled shrimp.
